It's not often that you arrive somewhere and immediately know that it's going to be a whole new experience. Villa Nalinnadda has been designed and built with the Mediterranean in mind, with two-storey whitewashed walls and bright yellow parasols outside. The restaurant's air-conditioned interior follows a white theme throughout, evoking a clean, spacious dining area where you can really focus on the main event; the food!

The owner, Khun Nokie, is originally from Bangkok, where she was part of the capital's high society, and was the first to host a white party here on Samui! Why so much white? Well, Nokie has an allergy to many fabric dyes, so she always wears white! She is extremely hands-on with the running of the 9-bedroom hotel and restaurant, where she focuses on Thai food, and makes it not for her guests, but for herself. How else can she tell if it's good or not! Many recipes have been handed down through her family over the generations, and some she has created by trial and improvement, working towards the flavours and aromas that she remembers from the past. She insists that her Bangkok food is not too spicy and perfect for the foreign palate.

The restaurant uses no monosodium glutamate, no peanuts (Nokie is allergic to them) and absolutely nothing is ever cooked in a microwave! All ingredients are the best quality available, many coming from Bangkok, and beef and lamb from Australia or New Zealand. As Nokie says, "We don't do cheap!" But the prices are amazingly good value, and there is no tax or service charge added to your bill.

Khun Nokie has teamed up with Martin Fells, originally from the UK and previously the general manager at Rocky's Resort, to expand the restaurant's operations. Breakfast is available from 7:00 am with many western and Thai choices. Think bacon and eggs, croissants, croque monsieur, cereals or fried rice with bacon.

For eight years, there was a van outside that sold a few varieties of noodle soup at lunchtime every day. Khun Boom, trading as Kala Noodles, made it all herself and would stay until she sold out, around 3:00 pm. Due to the sometimes unpredictable weather, Khun Nokie invited her to use the hotel kitchen, and the soup is now sold in the restaurant. Locals come from far and wide for this soup, served in a coconut shell with either rice or noodles and a crispy wonton. The noodles and wontons come from Bangkok, the only place that Nokie trusts the quality and taste. The stock is made every day using only fresh coriander root, garlic and pepper. The chicken or pork melts in your mouth, the taste is simply divine. The lunch menu also features their legendary roasted pork ribs which are slow cooked for four to six hours and must be tried to be believed!

An on-site bakery means bread, croissants and cakes, including a sumptuous baked cheesecake! A very proper English Afternoon Tea is alive and well here, and it's the perfect setting. A pot of tea or cafetière of coffee is served with scones, lashings of jam and cream and a slice of the 'cake of the day'. You can also add cucumber sandwiches, without the crusts of course. And it's available any time of the day that suits!

From 5:00 pm, you are in for yet another treat. Martin and Nokie have created a double act with the dinner menu. Each Thai or western dish has a reciprocal twin. Nokie loves to cook grilled sea bass in banana leaf, served with a secret-recipe sauce and a salad with grilled sweet mango. Martin answered the challenge with his pan-fried sea bass served with a sorrel sauce, fork mashed potatoes and garden vegetables.

Thinly sliced Australian beef, griddled with Teriyaki sauce is central to Martin's beef burger, whilst Nokie uses her homemade green curry paste and stock to produce her amazing beef in green curry, using birds-eye chillies with the stem attached to add a more delicate fragrance and aroma. Only the best beef available is used for the burger and the curry, second best is never an option at Villa Nalinnadda! Roasted duck in red curry with pineapple and lychee is twinned with pan-fried duck marinated in honey and soy, served with a blackberry puree. Dinner is definitely an adventure here!

Food, presentation and service are second to none. You are well looked after from start to finish. With a full bar, beer garden and happy hour from 5:00 to 6:00 pm, no wonder people keep coming back.

Villa Nalinnadda is situated in the southeast of the island on the ring road between Hua Thanon and Lamai. It's about one kilometre south of Rocky's Boutique Resort coming from Lamai, and 500 metres north of the Guan Yu (Chinese warrior) statue if coming from further south or west.
